Fundamentally, animals do think like us. When they are hungry, they seek food. When they are thirsty, they seek water. When the time is right, they seek a partner. When cold, they seek warmth.
The social animals also think like us. When danger threatens, they form a defensive group. Look at the way buffalo will defend the young ones. Form a circle with the horns pointing out. We do the same, only using more sophisticated techniques.
Yes, we have thumbs that can aid us in counting out money to pay for the fast food we buy. But apes have developed the use of tools to get food as well. A stick to get a juicy grub out of a hole in a tree, that had to take thinking power. How can I get that grub out of there?
Some birds use cactus thorns to get insects as well. These processes required learning. Learning is a thought process. This is backed up by Ravens in Japan that have learnt to sit on traffic lights. When the lights turn green, the ravens drop walnuts onto the road so that the cars tyres crush them. When the lights turn red, the ravens fly down and eat the walnuts. They always fly back up when the lights turn green. If that does not demonstrate a thought process, then some of the things we all do is not thinking.

Basically, yes, since all brains do about the same thing. Our brains just do more and have a bigger executive function. Apes have hands, though not as supple as ours. They show there intelligence. Porpoises and dolphins and really all the cetaceans have shown high intelligence and some have shown self awareness. They do not need hands to show how intelligent they are.

Some of them have complex thoughts, but a lot of them just have instincts to tell them what to do. A lot of animals don't really have feelings like sadness and joy, either. Go figure.
