Fruits like bananas are called "climacteric fruit", meaning that they continue to ripen after harvested (that's why they turn yellow), while "non-climacteric" fruits never ripen when picked too early.

The process known as "ripening" does this. This is combination of sugar breakdown, oxidation and treatment with gases. I provided a link below where you can read more on this.

I just know t hat they become ripe, but not sure how the chemistry works inside the cells...
