There's no cheat, (if you have the PC version there might be a mod). But if you raise your mercantile skill up to expert level, you can invest in a store and the store will have 500 more gold. If you reach master, ALL stores have an extra 500.

If you sell items 1 at a time, then you can sell them off at max price. The barter gold at normal shops (not Theives Guild fences) is per transaction, so you can sell a single item for max price, but the game won't let you sell 2 max price items at a single time. Instead sell them 1 at a time.
