Depending on how you wish to appear you would EITHER pronounce it in French (being a French design house afterall!) as "air-may" (the S is silent) OR, if you are not French or an European, then I would suggest you compromise and pronounce it "hairmay" as it could sound a bit "pretentious" putting on a French accent. Afterall do you call Munich Muenchen? Nope. :-)
I was a guest of Hermes in Chantilly, France for a weekend in 2000, and when we went out for dinner etc, we all said "hairmay" to the French who said "air-may" and we both sounded as correct as our respective tongues would permit.

1st syllable short & a blend of air & err.
2nd syllable has a bit of emphasis and sounds like mess w/ a soft s.

Lots of people pronounce it "her-meez" but it's really "air-mays". Learned that in my fashion marketing class, so I'm pretty sure it's accurate! :)
