From what I understand the 'Tally man' was the person responsible for counting the Banana crops as they were being harvested in places such as the Caribbean Islands. I believe the job of the Tally Man in modern times no longer exist.
There is a famous Caribbean folk song about the 'Tally Man' but as usual the name escapes me for the moment, If I remember it I'll update this post.

When The bannannas were being harvested, The slaves or workers were paid by the number of Bunches they brought to the dock or barn. The Tally Man was the bookkeeper who would keep track of how much each person brought in and give them a chit to take to the paymaster to get paid.

wozza's right and the song is "Calypso", famously sung by Harry Belafonte, containing the chorus: "Hey, Mister Tally Man, tally me bananas; daylighty come and we wanna go home!"
