For most careers you'd need a bachelors degree in the area you want to work in, i.e:psychology, education,etc. For longer careers like medicine or law, you can pretty much major in anything you want as long as it is somewhat related and it fills your requirements for application to graduate colleges. The best person to answer these questions is a school counselor (either at your high school if you're still there, or at your college if you've already graduated).
But don't worry too much about it, because more than half the people that go to college change their major at least once. Just stick to general classes (like english composition, whatever math you place into, foreign language, even some social science classes, etc) until you're sure what you want to do and you'll be fine.

Bachelor's degree can only be obtain from University usually 4-5 yrs depending how motivated your are to continue your education. On the other hand, associate degree is from community college. This is usually two years. There are certain majors that can't be taken as associate like teacher. You have to have atleast bachelor degree for it, to be a teacher. For social work you can take it as associate. Check with your counselor so your question can be clarified.

Almost no students know exactly what their focus is when they start college and many don't even declare a major until Junior or Senior year. Take the courses that appeal to you in the area you choose and you'll soon figure out what your preference is. There is vocational counseling available at schools too to help you narrow it down for a career..

Talk to the guidance counselor at your high school. Part of their job is to help you decide what field to go to, what school to attend, what degree to earn.
If you're not in high school, talk to an academic advisor at a college that teaches what you want to study. They will be biased towards their school, of course, but you can get some information that way. Try finding one that you can e-mail with if necessary.

You should go to college to get a well rounded education, to learn how to interact with others, to learn job skills, etc. There are many college majors that cater to or provide the intro steps to the professions you just listed.
