On a tire, say a P235/70R16, the 235 means that the tire's tread width is 235 mm. On a P255 the width is 255mm.
The 70 means that the side wall length is 70% of the width.
So the P235 has a sidewall length of 164.5mm. The P255 is 178.5 mm.
Now with that being said, on a 16 inch rim the overall height and diameter of the P255 is going to be larger than that of the P235.
The P255 is going to be 30.06 inches tall, with a 188.8 inch diameter. The P235 is going to be 28.95 inches tall with a 181.8 inch diameter. Your speedo is going to end up being slow by about 10%. When you are going 70mph your speedo is only going to read about 63 mph. You're going to get alot of tickets and you won't know why.
When you speedo reads 70, you're actually going to be doing closer to 80.
If you want to go with a P255 tire, go with a P255/65R16 which has a height of 29.05 inches which is much closer to your original P235/70R16.

The 3 digit number is the size of the tire measured down the sidewall, across the tread, and up the other sidewall, so the 255 in 20mm longer in that measurement. The 70 is the aspect ratio, that is, the percentage of the 3 digit number which consistutes the sidewalls. The lower the number, the shorter the sidewall. 70 is a nice average beefy sidewall. A low number like a 50 or 45 is a real short sidewall, like on a race car. If you put the 255's on your truck, that will be a slightly taller tire, you have to make sure the rubber won't hit anything inside the wheelwell, but it's not a drastic change so should fit OK. The speedo might be off a little bit.

P195/55R16 85H
'P' these tires are for a passenger vehicle.
195 – the width of the tire is 195 mm at the widest point.
55 – indicates that the height of the side-wall of the tire is 55% of the width - 107 mm.
R – this is a radial tire.
16 – this tire fits 16 inch diameter wheels.
85 – the load index, a maximum of 515 kg per wheel in this case.
H – the speed index, this means the maximum permitted speed, here 210 km/h (130 mph).

Ok, it's not "20" sizes, or any ridculous garbage like that.
235, 255, 205, whatever is the width of the tire in MM. 70 is the WIDTH to HEIGHT also called ASPECT RATIO. 16 is the size of rim it is designed to fit.
If you put on a wider tire, you want a smaller aspect ratio to maintain speedometer accuracy, especially when you're doing things like putting on larger rims, then calculation can get difficult.
Only going up to 255 from 235 maintaining an aspect ratio of 70 will not cause a marked difference in speedometer accuracy.

the first number is the width in millimetres, second is the side wall height in relation to the width (70 is the percentage of the width). the second tire will be 2 centimetres wider than the first and about 1.5 centimetres taller side wall.
