Do you just go back to the cashier and they hand you your change? I usually prefer to pay with cash rather than a credit card.

The majority of gas pumps that require you prepay will just hold your card until you finalized your transaction. They will then charge your card when you get ready to check out. They will wait until you're all done in case you get the munchies and buy a snack or something to drink too.
In the case of cash, then they will take your money, turn on the pump for that amount. If there is any excess, then you go back and get your change.

and if you pay with a credit card it only charges the amount that you put in your car

The pumps first preauthorize your card, then when you hang up the nozzle when you're finished pumping, it finishes the transaction with the exact amount that you've pumped.
