The majority of gas pumps that require you prepay will just hold your card until you finalized your transaction. They will then charge your card when you get ready to check out. They will wait until you're all done in case you get the munchies and buy a snack or something to drink too.
In the case of cash, then they will take your money, turn on the pump for that amount. If there is any excess, then you go back and get your change.
