if you haven't gotten rid of any selections in the main menu, use someone else's iPod to see which menus and things to select in order to change it back to English. It helps to have the non-English iPod in front of you at the same time as the English iPod. Or you could just reset your iPod in iTunes, but you have to put all your songs back on.

Man, I went to check something and it erased my answer, it is so mean.
Anyway, is it a language you recognize? Is it in roman letters? Something useful may be an on-line translator such as this:

Also, The fifth choice in the first menu should be settings. and the fifteenth setting under that should be language. The first choice is english. Or just go to the last one and choose reset all settings. This takes you to the language menu.
and I think that when you restore in itunes the first thing that happens when you turn on the ipod is that it asks you to choose your preferred language. This, I think is true for all model ipods. While some of the other solutions are following what I do on my video ipod and may not be correct for all models.
