My public high school, in California, requires a parent to call in order for me to leave campus, but I'm 18, arn't I my own legal guardian? Shouldn't I be able to sign myself out?

you can't sign yourself out because until the end of the day, the school is responsible for you, it's an insurance liability if you leave and then something happens to you, that is why your parent's, how are your legal guardians as long as you are living under their roof, must sign you out.

Unfortunately unless you're emancipated, the school still looks and treats you as a minor. Even if you were/are emancipated, depending on the school (mine was ridiculous), you still have to have someone sign you out. Drove me nuts when I was still in High School. I'm curious though, why the need to sign yourself out?

Pretty sure it sounds like the man has thought of that and that is why they require a parent to call. They are holding down.
