You can boil peeled beets until they are soft enough to eat and use the juice. It is not permanet.
You can crush the beets(vegetable slicer) and try raw juice. also not permanent.
You could try crushed cooked beets.
You could try using a cut beet to make prints on a white cotton cloth.

If you gring up a beet you get deep red juice, which readily stains porous cotton fibres. I don't know if the can make this dye color-fast
