FRITO PIE! A Texas Favorite...

3 cups Fritos corn chips
3/4 cup chopped onion
1 cup grated cheddar cheese
2-1/2 cups chili (your favorite -- homemade, canned, whatever)

Preheat oven to 350°F.

Spread 2 cups of Fritos in a baking dish. Sprinkle half the onion and half the cheese over the Fritos. Pour the chili over the onion and cheese. Sprinkle the remaining Fritos, onion and cheese over the chili.

Bake for 15 or 20 minutes and cheese is bubbly. Serve hot.

For the easy- the classic nachos. Go a little heavy on the refried, mix with whole black beans. Layer it on really thick and use a casserole dish. Make all of your layers with cheese and all the other good stuff you like on nachos, and make the top look pretty with slices of bell pepper and avocado.

Another quick and easy- slice potatoes into disks less than 1/4 inch. Lay them out in a greased baking dish. Make a cheese sauce- low heat melt 1/2 stick butter. When melted add 1/4 cup of flour and stir quickly till it forms a ball in the bottom of the pan. Quickly add about 1 cup milk (let it sit on the counter a bit so it isn't shockingly cold when it hits the warm pan). Add at least 1 cup of shredded cheese (I like a mix of 'em) stirring constantly until smooth. Add seasoning (s&p, and a little of anything else you like, such as a dash of worchester sauce, or dill, or a pinch of crushed red pepper) and pour over potato slices. Mix gently, trying to avoid getting the sauce all over the pan (it bakes on) and usually you can just pour and gently shimmy the pan for coverage. Bake on 350 till a fork goes through the potato slice easily. If the top starts to get too dark, cover with foil.
Some folks like to top their au gratin spuds with peas or crunched up potato chips. The sauce is also great for mac n cheez, and all sorts of stuff can get added.

I love this chili dip...and it's easy

preheat oven to 350

Get a baking dish, spread cream cheese on the bottom about an inch thick, pour chili over (you can use canned chili) I use 2 cans of Chilli Man No Beans chili and 1 with beans. place in oven for about 10 minutes, pour shredded cheese, I like a four cheese blend, and put back in oven until cheese is melted. Serve with Tortilla Chips. Enjoy!!!
