Depends on the wine and your husbands taste, for sure.
From a guys point of view though, I'd go with a red wine (especially in the spirit of the holiday) which points to a beef-based dish or something mildly hearty (but not too much!). I don't know your husbands taste nor the goal of the meal, but if you want to get him turned up a notch or two, choose a meal that is a little spicy and robust so that afterwards his metabolism is churning and he's not stuffed and sleepy. Cayenne, cinnamon, white pepper, red chilies, ... you get the idea. Impress him with something new too. If you haven't made it before for him then whether it turns out good or bad (hey, it happens) he'll appreciate your effort regardless.
But for actual recipes...check out www.foodtv.com and do a recipe search for the types of food/ingredients your husband likes. You can hone your search and find some really unique dishes.

I would say something Italian Maybe a Chicken Alfredo or an Easy Chicken Parmesan. They are easy to throw together and I love Italian food with Wine!

Chicken is a great option and most receipes are quick. Chicken Fetticine and Alfredo is a good choice. Also if you do some chocolate covered strawberries is great added fun!

Personally I love V-Day....my boyfriend think it's the dumbest holiday. But to me it's not about a present. It's about doing something special and fun!

If you like seafood, grilled salmon is great, or broiled shrimp or scallops, in a scampi type dish, with butter and butter over rice. All 3 are sort of "fancy", as in something you don't have too, too, often since they tend to be pricey, but they are easy to make.

I am marinating cornish games hens the night before & then cooking them for 20 mins. on Valentines day. I am also making asparagus, marninated onions & mushrooms (night before) & making a cheesecake (night before). Being able to make it the night before, when I have more free time I will be able to have dinner ready in 20 to 25 mins. on Valentines day.
