I am doing work for a client, though I have done logos, cards, and something from the heart. I Need ideas on how much I should charge for doing art for an educational game.
Its pretty detailed and and I will be scanning through photoshop etc. And with such things would it be wiser to charge by time or over all work.

Charge by the hour. As a professional graphic designer I have found that non-profit organizations, charities, and educational institutions seem to choke you for all they can get with as little money as possible.

Tell them you estimate XX hours to do the project and that if you think you will be going over those estimated hours, you will inform them beforehand. This way they can determine if it's worth their money to proceed or not.

As I do with all new business, request a certain percentage as a down payment before you begin. This way you know they're serious and if they cut and run on you, at least you have some money from them.

It depends on the project, if you think it's full of details and will take you forever to finish, charge by time.

If you're good at what you do and can do it fast, just charge for the overall work.
