I think it's a damsel in distress thing. The contrast is greater from the depths of despair to the throes of ecstasy, makes for more drama. However they're not all like that!

its bcoz they produce catharsis, its a state where, brought by the tragedy in the story, sorrow is induced. Through this sorrow, we somehow combine our own sadness in our own life, then vent it with the story....another thing is, these sad love stories leave us wondering and wishing it didn end the way it did.
