I have a monitor and keybord for the Mac Mini, but I see the iMac has features like Airport and Bluetooth which I don't use now and I don't want to get stuck with a small monitor if I can help it.
FYI I do graphic design and aim to do some video editing in the future. Thanks!

Im not really sure what your question is, but I'll throw in my 2 cents.
For years Ive had Macs.
PowerMac 6100, G3s, G4s, G5s (at work).
Now since getting married I dont have the cash for the G5 I want at home, so I went with a Mac mini.
I also already had the monitor, keyboard, mouse, etc., etc..
So I didnt need that stuff.
My Mac mini has no problem running any of the Adobe CS2 software, Quark, etc., etc.
All in all its been a seemless step going from my old 450mhz G4 at home to my new 1.83ghz Mac mini, except for a few software and driver issues.

If I were you I'd definitely go with the iMac. I think it would be a better tool for you since you're into graphic design and are interested in video editing. It's just convenient since its all in one piece of hardware, plus you'd enjoy the Airport and Bluetooth features.

Cons - Very high price point. Lesser aesthetics.

For the money you get more with the iMac.
