Depends on your interest. Here are some of my faves:

Fullmetal Alchemist: Two brothers go against the odds to right the wrongs they made when young to ensure their future is a better one than their past.
Naruto: A young boy is shunned by his whole village because of a demon bound within him. His quest to the top and the respect he both deserves and demands.
One Piece: A pirate tale about a strange boy and his oddball crew in the search for the legendary treasure and the title of King of the Pirates!
Her Majesty's Dog: A young girl with power to control the dead and her Koma-Oni or guardian demon going against all obstacles to have it their way and defeat the ghosts they fight.
Orphen: A young man does all kinds of work to raise money to just survive as a magician-for-hire on the run from his shadowed past.
Fruits Basket: A girl stumbles on a terrible secret of the Sohma family: 12 of their family turn into the animals of the chinese Zodiac when weak or huged by the opposite gender. A funny, romance.
+Anima: People with strange tatoos and animal characteristics travel in a world where they are feared or revered.
Princess Ai: A princess from another world finds herself in Tokyo Japan on the run from dangerous creatures and all kinds of foes as she makes her way in the world of singing sensations.

I actually recommend picking up an issue of Shojo Beat or Shounen Jump. You get to preview/read several different mangas all at once, and they give decent summaries to catch you up on current story lines that are running in each issue.
