Elder Scrolls IV: Oblivion. Probably the best RPG currently on the market.

It's not out yet (I think...) but there is a game called Blue Dragon that's suppose to be good, and is a really long game (I think it's on 2, maybe 3 discs, and for the xbox, that's long!).

Oblivion is good if you can get past the horrible monster-leveling system(why do I keep struggling to improve my character if the monsters never get any easier to fight?)
Blue Dragon is supposed to be really great but it might be a Japanese-only release right now. Not sure when or if its coming out in the US
