because that is the only band of light that is being reflected off of them, just like the grass is green, all other bands of light along the spectrum are absorbed and the green light is reflected by pigment is their exo-skeleton.

Being herbivores and spending almost their entire lives of green vegetation, being green would be the best colour to avoid being seen by predators. Most grasshoppers are cryptically coloured, even grasshoppers of rocky areas are typically grey and mottled color to help them blend in better.
So the simple answer would be camouflage and predator avoidance

Most of the grass hoppers I have seen are more brown than green.
Grasshoppers have evolved to blend into their backgrounds so they aren't as easy to be seen by predators. They feed on grasses and other vegetation, and that is their coloring
