The Hebrew letter Aleph (א) is sometimes used to denote different classes of "infinity" (cardinal numbers, actually). And I suppose a badly written infinity symbol (∞) might be mistaken for a lower-case Greek letter alpha (α), and many people mistakenly write 1/0 as ∞ instead of "undefined". But I can't say I've seen alpha used as "undefined".

There is no symbol for undefined, you must write out the word undefined.

You may be thinking of the letter phi which is used for the empty set but is not the same thing as undefined.

I have use alpha quit often. All greek letters and others are fair game for variables. You will find that people tend to use greek letters when doing trig and abstract algebra.
