As far as single lines: "Put...the candle....back!!"
The "Puttin' on the Ritz" scene, of course.
But I'm actually partial to the scene early on in which Frankenstein, about to board the train, is saying goodbye to his fiancee. Not much dialogue ("taffeta, darling...") but in the context it's hilarious, and the physical humor is great. When Frankenstein boards the plan and blows a kiss to his fiancee...who momentarily freaks out and ducks out of the way lest it muss her up before she heads to her party...well, Madeline Kahn was sublime!

That part kills me every time.
And the word "Blücher" is German for glue. That's why all the horses go crazy when they say "Frau Blücher."
