Alexandr from VI, he was cool looking in VII too, I wish they brought him back for XII. It was cool how he almost looked like a city coming up and wreaking havoc on enemies!

Which ever is the last Bahumut that you get on FFVII. There is Bahumut, Neo Bahumut, and ... I don't remember the last one's name but it's really cool. Looked like it was going to destroy the whole planet everytime you used it.

Bahamut, but it does get kinda annoying watching the whole thing every time you summon him. Was that FFVIII? I don't remember, been a while.
