A ton of money and a ton of time. Patience. Knowledge about all aspects of forms, accounting, hiring practices. Money and time. Advertising, payroll, decor, market base, menu design, lots of different insurances and permits (did I mention the money and patience??). Getting accounts set up with distributors. God there's so much more than just opening the door and flipping on the lights.

A good idea, good workers, good food.

You can spend all kinds of money on fancy decor and spendy ingredients, but if the service is terrible and the food is not good you are wasting your time.

The mexican place I've cooked at for years still insists on targeting the elite for their business, and they spend more money on fancy crap that never gets ordered because they don't want the "commoners" to be their prime customers.

Make sure if you live in a certain area that you accommodate the tastes of the people you want to serve.
