If I don't live in the US, and i have a 360, will the LIve service offer the same demos and trailers and XBLA games etc?

The matchmaking (playing against other players) is the same worldwide. However the Demos, Movies and Arcade Games on the Marketplace are not.

If you create an account with your local country, there are differences. For example in Germany the Arcade game "Doom" from the Live Marketplace is not available (it has been "indiziert" because of the depicted violence).

Movies and TV series are only available in the US.

If you want US content, then create another account (silver is sufficient) with an US location.

Keep in mind: If you live in the UK for example, and want to buy MS Points for your US account, you must do it with a credit card (the ZIP code must match the ZIP code of your Live account).
Point cards seem to be region coded, so a UK Point card code will not work on an US account.

However, sometimes content from other countries are not available in the US (e.g. a documentary about a british music festival was only available for UK Live accounts.)
