How may Orientalism and prejudice contribute to hate crimes against these groups?

You didn't make the term orientalism very clear.However,if you are referring to indians,pakistanis,bangladeshis or sri lankans,then here are they:-
1)Of course,SKIN COLOUR comes first.Some may have some difficulty in adapting with some one who,they think,don't look like them and so they get alienated in some cases.
2)RELIGION also plays an important part in this case as most of them are either Hindu or Muslim or Buddhist,which are different from Christianity.You may be probably aware about the controversies regarding wearing scarfs(hijabs) by young girls to schools in europe as well as in America.So,again,some find it difficult to adjust with someone with whose religion they know nothing about.
3)SOCIAL CUSTOMS are also quite different as most of us believe in maintaining a good bonding with our parents and other elders even when we have grown up,thus forming an extended family,which is quite different from customs out there.
4)Also the issue of EMPLOYMENT plays an important part as immigrants take up jobs there,thus narrowing the scopes of employment for the people living there.

I was under the impression that the term 'Oriental" and it's directives was politically incorrect. Asian or Pacific rim nations I believe is the accepted terminology.

In the former meaning, the term Orientalism has come to acquire negative connotations in some quarters and is interpreted to refer to the study of the East by Westerners shaped by the attitudes of the era of European imperialism in the 18th and 19th centuries. When used in this sense, it implies old-fashioned and prejudiced outsider interpretations of Eastern cultures and peoples. This viewpoint was most famously articulated and propagated by Edward Said in his controversial 1978 book Orientalism, which was critical of this scholarly tradition and of modern scholars including Princeton University professor Bernard Lewis.
