Tom Flores. Flores was a member of the Super Bowl IV champion Chiefs and coached the Raiders to the Super Bowl XV title.
Mike Dikta played and won for the 1972 Cowboys in Superbowl VI and Coached the 1985 Bears.

Ditka won as player and Coach if I am not mistaken, not sure of the other
"Fast" Willie Parker set a new record last year with a 75 yard run that beat Marcus Allen's prior record of 74.
