The Any Answers blurb about the Pope having copyrighted 'God bless you' in response to the bubonic plague may me wrong because it is also a commandment in the Quoran and the guy who attributed Greek origin must have it wrong because Greeks believed in many gods, not just the God and Satan idea.
But in answer to 'why do people sneeze', because sneezing is an auto reflex, more efficient than voluntarily 'blowing your nose' to explosively clear contamination too sudden or too severe to be trapped in the usual air filtration system in your nose.

We sneeze to clear our breathing passages. We all have a natural reflex to sneeze whenever a small foreign substance enters our airways.
