on a site you see different groups of people with different coloured lids. I'm sure there's a code/order to it, but not sure what it is. Any building professionals out there who can enlighten me?

The laborers usually wear either yellow or orange hardhats, for visiblility. People in authority, such as superintendents, inspectors and engineers typically wear white hats. There's no formal code or rule, it's just the usual practice.

Usually white is supervisors and administrators, red for inspectors such as those for fire and building codes, some are coded not only by your status but by your specialty.
