1) Land -- This is obviously #1. All wars (in my opinion) are really rooted in land aquisition (trade routes, more specifically). Example: Iraq has been targeted as a primary place to set up trade routes at least since WWI when Germany and Britain invaded it.

2) Food/grain - For obvious reasons

3) Coal / oil. They provide power, which any country with a strong infrastructure would need to have. Abundant amounts of clean water depends on power.

You are asking two different questions:
1) What are the most important commodities in the world?
2)Which commodities do people compete to have?

1) Most important commodities:
-Labor: this embodies much of an economies force in production and includes things like eduction (human capital).

-Water: like labor, this has no close substitutes. Move to the desert and you will quickly learn the value of water.

-Land: again, no close substitutes. Like water, value increases quickly with scarcity. Land is required to produce food stuffs and is one of the few commodities which does not change value as a result of market forces.

Commodities people compete for:
Labor and land would be two since they are in fixed supply for a relatively long period of outlook (20 years maybe to have a worker and the same to reclaim corrupt land). Energy products would be a close #4 on my list and #3 for competition since water is abundent most places. Oil can be substituted for, but it was the defining commodity of the 20th century.

I think the 3 most important commodities are food, water, and shelter, but the 3 most disputed are probably pure water, land, and oil. Ah, politics.

I would say the following:

1) Fresh water in large quantities - Dams,rivers,lakes
2) Mineral resources - Oil,Iron,Gold....etc
3) Food resources - Arable land or rich sea fishing grounds

Water..every one needs clean water, very few have it.
Land...Every-one wants more, either to control for wealth or to house it's people
Food...Self evident, but a lot of countries can't feed their people and can't afford to import food
