Finding a list like that depends on whether you're looking for movies or television shows. As far as movies are concerned, anything by Miyazaki is pretty cool (Spirited Away, Princess Mononoke, My Neighbor Totoro, Howl's Moving Castle, etc.). I don't know where you could find a list of all animes, though--there have got to be at least a few hundred at this point.
