Carribbian Beach is a beautiful resort, it is one of the most popular moderate resorts.
For attractions, there are so many. Just about every ride is fun, for kids or adults. For example, the Winnie the Pooh Ride, Peter Pan, Mickey's Phillaharmagic (spelling?) are all more for kids, but still a lot of fun even if you are 18 or older.
But, there are also some rides that are fun especially to the older folks. Let's do a little break down by park, I think that will be easiest:
Magic Kingdom: More for the younger audience, but I don't think you can go to Disney without visiting Magic Kingdom. The rides:
~Space mountain, probably one of the best in the parks
~Astro Orbiter, a little kiddy but still fun
~Jungle Cruise, a classic not to be missed
~Pirates, nice slow pace to cool off, may be a long line, but worth it if you like that kind of thing
~Splash Mountain may get a little wet, but worth it
~Big Thunder Mountain pretty cool as well
~Haunted Mansion is just a really cool ride as well
EPCOT: Probably the best park for older Disney goers, but still a ton of fun for all ages.
~Test Track a lot of fun and different from most rides
~Innoventions a lot of fun things to play around with, plus get in from the sun
~Mission Space an awesome ride and unique experience, one of my favorites in Disney
~World Showcase, if you have the time it is really interesting to sell all the countries. But if not stop by a few just to check them out, some of the best food in Disney is in World Showcase!
MGM: Another good option for older visitiors.
~Indiana Jones a great show and good place to rest
~Star Tours is also fun if you are looking for something a little more exciting
~Lights Motor Action a really great show, almost unbelieveable, pretty cool even if you aren't into cars
~Rock n Roller Coaster one of the best coasters in Disney, and one of the few!
~Tower of Terror, a ton of fun, really exciting, a must see
Animal Kingdom: Not as many rides as the other parks, but a lot to see, especially if you enjoy animals!
~Kilimanjaro Safari the best thing in Animal Kingdom, I try to get on this first, especially during early entry to get on fast and get the best views while the animals are out before it gets hot.
~Kali River Rapids a ton of fun if you don't mind getting a "little" wet
~Expedition Everest, a great ride and a must see just to see how well it has been themed and how much work and research was put into it
~Dinosaur is a lot of fun as well, a little like the Indiana Jones ride in Disneyland. It is a little bumpy, so be prepared
~Primeval Whirl is an easy going coaster but still really fun
Obviously there is a lot more than I listed, but these are just the things that stick out to me as an adult. There are a ton of great shows that really shouldn't be missed as well. Since you are young you will be able to move at a fast pace, but going during spring break lines are going to be long, so you really need to pick what you like the most. Come up with a good plan and be sure to use fast pass. Make sure to come up with what rides you want to ride most, and the ones that you want to ride if the time is there. But don't expect to see it all, especially during the spring break time frame.
Another option outside of the parks is Downtown Disney, more specifically Disney Quest. Both are a lot of fun and you could make a day out of each. Downtown Disney is great for shopping and eating as well.
Finally, don't forget about the water parks. There is a ton to see there as well and is perfect for all ages.

I don't understand why the travel agent told you that you had to be 21 in order to check into the hotel. You said you're staying at Disney's Caribbean Beach Resort, right? My boyfriend and I went to Walt Disney World in 2005 by ourselves when we were 18 and checked into Disney's Polynesian Resort with no problems. We also went last summer when we were 19, so we've actually gone twice while we were under the age of 21.
You said "spring break laws." What, is this the law only during spring break? That doesn't make sense. And it says right on the Walt Disney World website that you only have to be 18.
Anyway, I would suggest going to all four of the Walt Disney World theme parks. If you have time, definitely check out the water parks and Downtown Disney. All of the attractions at any of the theme parks are awesome. Walt Disney World is just the most amazing place. You and your friends will have a great time!

well thats kinda werid considering that i was 18 and i stayed not in the park kissimmie florida which is near the parks but outside. Well it all depends i mean there something for everyone i like costers i really enjoyed mission space. hope i helped
