I have three
- Ellis Island...one block off the strip, behind Bally's. Best prime rib special - not on the menu =]
- The Bellagio buffet. YUM!!!
- Mon Ami Gabi at Paris. They have amazing food - try the chicken and brie sandwich! Their waitstaff is just as amazing as the food!

Ahh... where do I start.
OK. Buffets. Rio has the BEST buffets in Las Vegas. Both their regular and their seafood buffet are really good. The food is excellent, the choices are plenty, the service is good, the place is clean, what more can you ask for in a buffet.
Casino Restaurants
Le Cirque in Bellagio is really good. The price is a little high, but the food was to die for. Also, if you call ahead of time to make a resesrvation (and I mean WAY ahead of time, like weeks to months I've heard), you can reserve a table by the window which directly faces their pool of dancing water. It's beautiful and totally worth it if you are on a date.
I've also heard that the Eiffel Tower Restaurant (I'm not sure what it's called, but it's in the Eiffel Tower at Paris) is excellent. It's higher up and has a view of the strip. I've also heard that the food is excellent.
Off-the-strip dining
Firefly on Paradise is a tapas restuarant on Paradise St. I'm not exactly where since I've only been there once. The tapas are delicious and they are not too expensive. They are always packed so you will have to make reservations earlier in the day if you want to eat there. this is their website. http://www.fireflylv.com/

Savannah Steak House at the Tropicana. I think the hotel/casino is an old dump and should be imploded, but the restaurant is fabulous. You have 5 or 6 waiters per table and they never miss a beat, and they don't bug you, they just do their thing. Ask for Alex, he is the best. You feel like royalty when you eat there.
Food is excellent. I highly recommend the filet mignon if you like beef. Cooked perfectly. Some would say it is pricey (about $80 per person), but it is worth every dime!
I also love Vino's at the Cannery up in North Las Vegas. Excellent italian food, excellent service and super friendly people. Prices are great too ($20 per person).
Lindo Michoacan for Mexican. It's off the strip (Eastern and Desert Inn) but worth the drive. Small place, very friendly. About $20 - $30 per person.
I have yet to find a good Japanese / Teppan restaurant here though. I got food poisoning at Hamada, so I don't recommend it!
Bon Appetite!

My favorite is Nobu in the Hard Rock Casino. Reservations at other Nobu restaurants are really hard to get in NY, Malibu, and LA (where it is known as Matsuhisa) but not in Vegas. The food is phenomenal and there's a chance of celebrity sightings. If you haven't been there before get the omakase which is where the chef picks the dishes for you and I think it starts at $90 and up. The food has been called by the critics as "mind blowing" "thrilling" and I love the new style sashimi and black cod with miso and please do request the bento box desert which is a molten chocolate cake with vanilla sauce and green tea ice cream. And if you go by reviews, zagat rates it a 27.

My favorite is the Peppermill across the street from the old Stardust Hotel and Casino. It is "old time Vegas" at its best. I swear I could imagine Frank and Dean sitting in the booth next to us! They have quite an extensive menu, generous portions, and reasonable prices. Adjoining is the "Lounge" straight out of the 50's. open hearth fires, neon decorations. This is not one of the new, "in" places to dine in Vegas, but has been here forever, offering great food and service. Not a touristy place. Definitely my favorite. Has stood the test of time.
And of course for fun, there is always Margaritaville.
And for the best desserts EVER, "The Chocolate Swan" in Paris. Have fun!

Call me crazy but my favorite place to eat when there was the Fulton Street Fish in the New York New York. The clam chowder in the bread bowl warranted repeat visits alone but they had a great family meal deal for $14.95 that had fish, chicken, shrimp, fries and slaw plenty for 4 people and it tasted like an authentic fish & chips joint. I just loved it. I went there 4 times while there last October.
I also loved the weekend brunch at the Las Vegas Hilton...the guides said it was only so-so but I thought it was way better than the lunch buffet at the Aladdin, which the guides gave high marks. And I like to think I am a fussy eater!

Emeril's Delmonico Steak House is fantastic! We dropped nearly $300 for dinner there two years ago...but I've never tasted food like it before.
Smith & Wollensky's is another great restaurant. Their food, although not as good as Delmonico's, is about half the price.
Great food in a sports atmosphere can be found at ESPN Zone inside NYNY.
Finally, for a good old fashioned Las Vegas Buffet, I HIGHLY recommend the breakfast buffet at Excalibur. The selection is unbelieveable and the food is fantastic.
Other great places to try: America at NYNY, Sherwood Forest at Excalibur, buffet at Harrahs, and any one of the Starbucks in nearly every hotel/casino.
