Since I don't know how old the kids are, it's hard to say:

If they are in high school, pick a list of issues and have the class analyze Bush statements over the years. The Iraq war is the easy one, but I think Bush's opinions have changed over the years on many issues.

Jr. High - write down a list of his most influential relatives (Bar, daddy Bush, daughters, wife) and have them try to examine their influences in his life. Do it in teams if you run short of relatives.
