the best time of the year to go to Las Vegas for bargain room rates is in December, after the National Finals Rodeo(NFR) up until just before New Years. This year the "golden" period is December the 9th until the 28th.
In "general" you can find better rates from Memorial Day until Labor Day and from the first of November until the end of February. To find the good deals you must, avoid special events and large conventions, these drive room rates through the roof. Sunday through Thursday is "almost" always much cheaper than Friday and Saturday..
I'm holding 10 nights at the Gold Coast from the 16th of December until the 26th for a total cost of $224, I found this rate last week on http://www.travelworm.com and the GC matched the rate. I just checked a few minutes ago and the rate is up to $35 for Sunday - Thursday and $39 for Friday & Saturday up from $20 and $32. I would be willing to bet the rate will go back down again. You might check on May 28th, if you're interested in the early summer, I found a great rate for that week a while back..

As far as airfare and hotel: the two weeks before Christmas, and pretty much anytime during the summer. Weekdays (Sun-Thurs) are cheaper than weekends too.
