I've heard that you dont want your guild to be to big or too small, what is a good size?

Basically, I'm a dedicated player, though I wouldn't call myself hardcore. I'm interested in end game raiding, mostly. Though I am sure I would also want to PVP a little.

I've been invited to handful of start up guilds. Would you say its better to join a guild in start up phase (as you would in a way carry some amount of seniority) -- or is it better to join well established guilds.

Either way -- what are the things, if any, to look out for.

Any info is appreciated.

Well the right size depends on what you're interested in...newer guilds tend to have a less amount of people in them. Smaller guilds for raiding have less people and are less effective in raids..although bigger guilds can have a longer wait time to get into raids (you might get in every 2-3 weeks), but can go through a raid quickly.
Most guilds will do PvP unofficially if you ask people to do it. So joining a raiding guild will give you that little sense of PvP you want.

Joining a start up guild is a taking a chance, as they might not make it to raiding status and break up. You can find the best raiding guilds on your server (by comparing gear with people in that guild). Ask people in those guilds for their guild website, apply, and see if you get accepted. Most of the guilds will invite you into their alt guild, and when there's an opening for your class they'll invite you.

So it's all up to you...find a guild that you like, has fun people, and is an honor to be in, and apply for it.

Good luck!

Basically you have to look for guilds which are helpful and friendly. Do not jump from one guild to another to find a better one- stick to one for sometime and see how it goes and how your other friends in the guild are.

Personally I look for guilds which are well established as they have good experience on the quests. Also pvp with experienced groups are more fun and enjoyable.

Try to stick with guilds which have a minimum size of 30 or more players. In world of warcraft the more the better :-)

Thanks,
Robert
