Does anyone know where this idea originated, or if anyone has actually seen this occur?

On the Simpsons. In one episode Bart won a prize on a radio show, and instead of giving into Bart's demand for an Elephant, the hosts offered to surgically transform Principal Skinner into "some sort of lobster like creature". Skinner wasn't amused.
There is some talk of Natsuki from Mai Hime eventually being transformed into a lobster like creature.
The overall source may be the book To Cage a Man by FM Busby which features a species of lobster like aliens that kidnap humans and convert them.
