Can I use my debit card ? I trust the hotel completely

To be honest it's much of a muchness. if you pay sterling you will have a better idea of what you are actually paying.
Yes you can use your debit card no probs. when you get your bill you will see the sterling amount.
a tip: sometimes you get more for your money by changing the pound to the US dollar and then when you get to barbados change the US dollar to the Bdos dollar! do check the rates though! i found its worked for me a few times.
