Why is it that when people cut their finger or burn their hand, they grab the afflicted limbs wrist with the other hand and shriek and hop/dance in a little circle? Is this instinct? Does it help to jump around in a little circle? Is it that when you had a bug biting you, maybe it would shake it off? I am so confused.

The shaking or rubbing an injury is a method to distract the pain signals to the brain. This is often referred to as the Gate Control Theory. The rubbing or shaking sensation competes with the pain signals going to the brain so the brain doesn't percieve the pain only the shaking/rubbing sensation.

It is a normal reaction to pain to pull the area away from whatever is causing the pain. the jumping is just for fun ;)
But actually I would think the jumping would also be a way to get away from the pain or to distract you from the pain.
