Good question.
Dion Dublin scored a hat trick for Coventry against Chelsea on August 9th season 1997/98.
Michael Bridges scored a hat trick for Leeds against Southampton August 11th season 1999/00.
Mick Quinn scored a hat trick for Coventry against Arsenal on August 14th season 1993/04.

I just remember Mickey Quinn's hat-trick at Highbury off the top of my head - and that stupid little dance he tried to pull off !

He also scored 4 for Newcastle against Leeds but that was in the old 2nd Division
