The gable end bit confuses me.Plastic edging on bottom roof tiles running along the side of the house,maybe also the gable end is usually to keep out birds and is called "bird trap".

It's called Dry Verge, you can also get a Dry Ridge System. They are use so you don't have to cement the ends of the tiles or the ridge tile. Slightly more expensive but worth it.

ridge end caps or some call them ridge end covers or even tile end caps is the most popular name,, sounds confusing but people have different names for them.

plastic edging is generally called molding. on shingle roofs, you might be referring to drip edge, but that is metal and you are talking tile roofs. dunno.
