digging up all his plants and rocks, why is he doing this and what do I need to do to get him to stop????

This is normal behavior. They do this to create small homes for themselves or hiding locations.

You do not want him to stop doing this. I used to have an large African Chichild who would wake me up at night, because the tank was in my room and I would hear him spitting rocks at the glass.

If your your fish is a female this is a practice to building nests does not mean she is pregnant though. Be sure your fish is eating regularly. If so, then there is nothing wrong!

That's perfectly normal. Bubble bee cichlids are definite landscapers and they will keep arranging and re-arranging the tank. You'll probably want to remove the plants, as they won't last long being constantly picked at, and give him lots of rocks to play with.
You don't want him to stop this, it's part of what makes them so interesting, anyway, so enjoy watching him be busy.
