I can't think of a reason why you would want to do it but if you're worried about someone changing the information on the spreadsheet just password protect it.
To my knowledge it's part of the program and can't be disabled.

You can remove the icon but I don't think you can remove the property from the tools menu

You are simply evil. Use tools customize and remove the menu. Perfect revenge on the bean counters. I even remove the "save" menu.
