I would keep the thermostat in. It doesn't hurt anything to run it without it, it just takes forever to warm up. But he is right, a cold engine uses more gas, but it does run better. If i were you i would get a cooling system flush and check the fan again. My car did the same thing and every time i checked the fan it was on. But I soon found out it was only turning on sometimes due to either a loose wire or a fan motor.

If you are not loosing coolant, the fan is working, and it still runs hot with the thermostat removed, you have one of two problems.
1) Your radiator is plugged, restricting coolant flow. In this case, have the cooling system chemically flushed. Severe cases require removing the radiator and having it "rodded", where a radiator shop removes the tanks and physically cleans the coolant passages, then reassembles it. In some cases, the corrosion will be bad enough that the radiator needs to be replaced.
2) Your water pump has failed, causing no coolant circulation. The impellor on the inside of the pump may have come loose from the shaft, or the blades have been corroded away from corrosive coolant. In the first case, simply replace the pump. In the second, replace the pump and have the system flushed.

For what it's worth, a recent version of the Haynes repair manual for the Nissan Sentra (and 200SX, for that matter) covers models from 1995 to 2004, so picking up a copy may lend some insight into what may be happening. A local auto parts place may have one, but they may still have the older version that goes up to '98 (or whatever year it was) instead, so be careful.
