You need to give them an incentive to go through a maze. If they don't have one, they will definitely not be bothered to go through the maze.

If you're using a certain door shape / colour, they need to know that behind a certain door, there is food and that there is food at the end of the maze.

Goldfish are exceptionally bright and have been found to have memories equal to those of elephants and monkeys. We can tell you that this is true, which it is, but for a project, you need to provide proof of your theory in the form of reputable research, so you are going to need to do your own research to get this information. That said, I will get you started with a couple of articles, but please do some more research of your own. Bottom line is, food is always the teaching tool for animals that gives them the incentive to learn. You need to figure out how to place food where you want them to go and to put something unappealing where you don't want them to go. Thanks for choosing a project that may open some people's eyes to the fact that goldfish are not this stupid, disposable creature that we have been brought up to believe they are!

goldfish will learn anything for food. there have been a couple people that have accomplished what you are doing -- just do a websearch and find them. there is a web site for california schools that lists science projects.
