I don't know about the spousal support, but as far as child support, you wife can seek back payments with interest on what the court does finally decide. The idea is that she is usuing a credit card to support herself, and the law allows that as debt incurred on your behalf.
It's a good idea to send child support, even more than enough for your child's sake, and to cover your butt when court comes along. They will see that you are a loving father and will view it very well in your favor. Write checks only, so you can prove your support. Think of your child when you write the check, not your soon to be ex.

If he's legally seperated, there should be a legal document outlining such things.
He should pay child support and document all payments. Alimony is a different issue all together...

Only if it's in the agreement. You have to go to court to get either. And if you wait too long, chances are you won't get alimony. So get into court right away.
