i dont know about the whole lesbian thing in coleges or universities, but top noch stuff in NYC is Columbia University and NYU. Now if it comes to an area which one of them are in homosexual area then it would be NYU. Trust me there are plenty plenty of them, whole neighbourhoods and sections exactly in location of New York University area.

If you're looking for a strong Lesbian scene, Probably NYU.
If you're willing to look outside of NY, check out the schools near Northampton, Massachusetts. That's a very strong, happening Lesbian scene.
