Try eating a peanut butter sandwich every night before you go to sleep. I did this for about 2 weeks and gained 5 lbs. I would also advise lifting weights so the extra weight turns into muscle and not fat.

Increase your carbohydrate intake(i.e. breads, pasta). Slightly increase the portion size of your meals. Remember also that muscle weighs more than fat. With that in mind, it is a bad idea to put yourself on a fat-based diet. It is extremely unhealthy and will not help your cause the way you want it to. Please use this sort of diet in proper balance with exercise. Weight-bearing exercises will not make you lose weight but help you gain muscle mass. This is key to gaining and maintaining healthy weight.

any fast food
protein bars
maybe try eating at buffets more often and just eating as much as you can and then a little bit more
one tip: when one eats salad they increase their food capacity for their next meal. Once I only ate salads for dinner for an entire month, I got my food capacity so high that the next month I ate like crazy and easily gained weight.
Hope this helps!

Drink a boost with every meal. When you do this it is like your eating 2 meals when you actually only eat one.
