I leave a house in northern MN during the entire winter. At the advice of my plumber, I set the thermostat at 50 and have never had a problem (in 3 years). Just leave all of the interior doors open upstairs and downstairs so the temperature is as uniform as possible.

I suspect that you could get away with a slightly lower temperature if the thermostat is downstairs (heat will rise) and there is a reasonably free flow of air between the rooms, but why tempt fate?

When I lived in the UP, 55 was as low as we ever tried, but our house was reasonably well insulated. We never had a pipe freeze.
