Chcken or shrimp. Preferrably shrimp.
Hold the sausage.
Meaning leave the seasoned pork products out.
Wouldn't want anyone to be OFFENDED by their sick nasty little mind playing dirty tricks on them!!!

Shrimp and sausage to me are the traditional gumbo ingredients along with okra.
