Around a hundred! The exact number is debatable, mostly because some historical names don't reflect the modern definition of what a "sea" is. For example, the Gulf of Mexico is now considered a sea.

There are many seas in the world:
Baltic Sea
North Sea
Sea of Okhotsk
Mediterranean Sea
Ionian Sea
Caribbean Sea
Yellow Sea
Black Sea
White Sea
Adriatic Sea
Some seas are subdivided. The Mediterranean Sea is divided into the Aegean, the Adriatic, the Tyrhenian, the Libyan and so on. So you could never count all the seas.
There are four major oceans: Atlantic, Pacific, Indian and Arctic, but geographers also talk about the Southern Ocean as separate from the Atlantic, Pacific and Indian, because of the way the currents go in it, and some treat the North and South Altlantic as two separate oceans, or the North and South Pacific as two separate Oceans.
So it is possible to define seven oceans, but they are nothing to do with the "seven seas" in the phrase "sailed the seven seas".

Come on...all this garbage about seven seas is ridiculous. One answer even named seven and left out the Mediterranean and the Arctic Ocean for Pete's sake.
The term "seven seas" is an anachronism that was referred to by ancient explorers. The seven were:
* the Red Sea
* the Mediterranean Sea
* the Persian Gulf
* the Black Sea
* the Adriatic Sea
* the Caspian Sea
* the Indian Ocean
